I don't do much baking anymore, since I moved to Bristol I've been stuck with a teeny little kitchen with barely any worktop space! So I usually make the most of my mum's big old table (and ingredients!) when I pop back to visit her in Devon.
For some reason, I'd been craving dark chocolate with the sharp juiciness of raspberries, so I made up these cakes. They're quite wet inside once cooked, due to the melted chocolate & fruit, so they almost have the texture of brownies! Also, they're best kept in the fridge, and then warmed up for 5 minutes or so in the oven when you fancy one!
This recipe makes 12 big cupcakes/muffins.
Ingredients:
• 170g self raising flour
• 55g cocoa powder
• 2tsp baking powder
• 225g caster sugar
• 75g grated dark chocolate (and a few extra squares to nibble on)
• 4 eggs
• 200g soft tub spread
• a couple of handfuls of raspberries
Method:
• Preheat the oven to 180º
• Stir all the dry ingredients together
• Add the eggs & butter, and beat thoroughly
• Stir in the raspberries
• Divide between 12 cupcake/muffin cases
• Bake for about 20-25minutes, rotating occasionally, until a skewer comes out clean
• Leave to cool slightly in the tray, then on a wire rack
• Consume while warm, best served with a cup of Earl grey!
