spicy cajun chicken.



If you're struggling to think of what to cook for dinner this weekend, how about this stupidly yummy and healthy cajun chicken and salad? Read on for the recipe..



For the chicken:
• a good pinch of salt & pepper
• 1 tbsp cajun seasoning
• a pinch of dried thyme
• a handful of sesame seeds
• a handful of polenta
• strips of chicken breast (about 400g for 2 people)
• a little olive oil

• heat a frying pan over a high heat, and add a little oil
• put the seasoning, sesame seeds & polenta on a large piece of greaseproof paper, add the chicken, fold the paper in half and bash the chicken until about 1cm thick
• fry the chicken until cooked through & a little crispy on the outside

For the dressing:
• juice of 1/2 a lemon
• 2 tsp honey
• 2 crushed garlic cloves
• a handful of chopped coriander
• a glug of olive oil

• while the chicken is cooking, mix all the dressing ingredients in a clean jar & shake

And the rest:
• cous cous
• a vegetable stock cube dissolved in 1 pint boiling water
• salady stuff (we used baby spinach, cherry tomatoes, red pepper & avocado)
• a few spring onions


• add cous cous to the stock & leave for 5 minutes to cook
• prepare your desired salad and arrange on the plate with some cous cous
• remove chicken from the frying pan & place on top of the cous cous
• add some chopped spring onions to the same pan, cook for 1-2 minutes and serve

  4. Ooh that looks so good! My return to uni in a few days sees the start of 'come dine with me' with my flatmates and I think this might be a great dish to bring to the battle. They won't know what hit them!
