
Yesterday, my mum wasn't feeling well, so I thought I'd make some soup in case she didn't feel like eating "real" food. We had a lot of carrots and oranges, so I decided to make up this soup, sure to fight any illness away...
Ingredients:
• tablespoon of oil
• 4 cloves of garlic, chopped
• a red onion, chopped
• lots of carrots (I used about 9) chopped
• a large potato, peeled and chopped
• 2 thumb-sized pieces of ginger, finely grated
• the juice of 2 oranges
• 2 vegetable stock cubes, dissolved in a pint of boiling water
• natural yogurt and chilli flakes to serve
Method:
• Prepare all of your ingredients, and heat a tablespoon of vegetable oil in a large saucepan on a low heat.
• Add your garlic and onion, cover with a lid and leave for about 5-10 minutes to soften.
• Chuck in the carrots and potato, stir around and cook for a further 10 minutes.
• Next add the grated ginger, and pour over the juice of one of the oranges. Stir and cook for 5 minutes.
• Pour over the stock, and leave to simmer until the carrots and potato are tender. Have a lovely cup of tea while you wait.
• Taste, and add the juice of the second orange if required.
• BLEND! And add more liquid if needs be.


I served my soup with a spoonful of natural yogurt, and some chilli flakes which gave it a lovely extra kick! And a slice of warm, buttery wholemeal toast. I absolutely wolfed this down! SO YUMMY!


Orange soup sounds weird but incredibly interesting!
ReplyDeleteMy mum makes a similar soup and it tastes amazing. The ginger and carrots are so healthy. Sadly I don't own a blender so I might see if I can improvise and just have very lumpy soup
