Yesterday I popped down to my local green grocer and bought LOADS of fresh, local vegetables. I had this for dinner last night, and it made so much that I'll definitely be having it again tonight! Not that I'm complaining - it was absolutely delicious. So I thought I'd share with you all how I made it :)
• GRATE OR FINELY SLICE THE FOLLOWING:
• a few carrots • a shallot • a third of a cabbage • an apple • a few sticks of celery • some fresh thyme •
• ADD TO A LARGE BOWL WITH:
• juice of a lemon • 2 teaspoons of honey • 2 teaspoons of wholegrain mustard • 1 teaspoon of ground pepper • large pinch of salt and pepper •
• MIX THOROUGHLY.

• IN A LARGE BOWL, MIX:
• 400g turkey mince • 2 crushed garlic cloves • half a finely chopped chilli • finely chopped thyme • zest of 1 lemon • salt & pepper •
• FORM INTO BALLS/PATTIES
• PLACE IN BAKING TRAY WITH A TINY BIT OF OIL
• COOK FOR ABOUT 30MINS/UNTIL COOKED THROUGH
