healthy chocolate sponge in under 10 minutes!

Sometimes you need a chocolate fix, and sometimes you need it in under 10 minutes, lest you hurt someone badly. 

Even though we used to often make a chocolate sponge in the microwave as kids as a quick pudding fix when nothing else was in on a Friday night (and my brother and I were probably whinging) I've been a little dubious of mug cakes in more recent years, thinking they'd turn out rubbery.

I was wrong.


This chocolate sponge recipe is not vegan, but it is dairy and gluten free, and only has 4 ingredients - although you can pimp it out with some extras if you feel like it - it's similar to my favourite pancake recipe. It even made me feel better when I was full of a summer cold, so basically, it must be magic.

QUICK & HEALTHY CHOCOLATE PUDDING

(serves one)

INGREDIENTS:

• 1 small, ripe banana
• 2 tbsp crunchy cashew butter (or your choice of other nut butters)
• 2 tbsp raw cacao powder
• 1 egg

METHOD:

• mash the banana with a fork until it becomes a smooth paste.
• add the nut butter and mix thoroughly, before adding the egg & finally the cacao powder.
• if you're adding anything else (chocolate chips, nuts, raspberries would be nice..) stir them them in now!
• find a microwave-safe container which is twice the size of the mixture.. you only want it to come halfway up the container, as it rises while in the microwave. I used a large mug. 
• microwave on high for 2 1/2 minutes, until set in the centre.
• you can eat it straight from the mug, or tip it out into a cute bowl like I did! 



Even though there's a whole banana in it, it isn't super sweet - it has the flavour of dark chocolate. If you prefer it sweeter/less intense, you can use less cacao, add some milk (dairy or otherwise) or add something sweet like honey or sugar. 

It was so delicious and puddingy - exactly what I needed! 


You can also cook a standard sponge (flour, sugar, butter, eggs) in a microwave! It'll have a slightly different texture but is still so good, and so much quicker.

Panasonic sent me their Combination Microwave to try out, and it made cooking this cake & other things so easy. Most of the time I just press buttons on a microwave and hope that it turns out ok, but with this it's made so much easier. 

You just choose the function, turn the dial to select the cooking time or weight of your food, and away you go. Although I was a little scared to press the "chaos" button..
