Since Carla posted her pancakes on her 365 tumblr, I have been craving them. These REALLY hit the spot.
Ingredients:
225g plain flour
1 tablespoon baking powder
Pinch of salt
1 teaspoon sugar
2 large eggs
300ml milk
Whisk the flour, baking powder, salt and sugar together in a large bowl. This will remove any lumps! (You can sieve it if you want. My sieve was dirty and I couldn't be bothered to wash it.)
Make a well and beat in the eggs. Slowly add the milk and beat it in. And your batter is done! Easy peasy.
Add a little bit of butter and/or oil to a hot frying pan and add tablespoons of the mixture. When it starts bubbling on the top, it's time to flip it over! They're so quick.

I kept my pancakes warm in the oven while I cooked some fruit in the same pan. I used plums, blackberries and blueberries which were all on offer at Co-op. I added the juice of half a lemon, a teaspoon of syrup and a teaspoon of sugar.
You can obviously use whatever fruit you want and sweeten it to your taste! I just love the colour my fruit went :)
(Check me arranging it on my plate like a pro chef. Didn't clean the drops of saucy stuff off though. Got to keep some rustic messy lyziness in there somewhere)
