The weather's heating up again, so it's time to stock your freezer up with tasty treats to keep you cool in this blazing sunshine that will be finally gracing us once again!
I've teamed up with Alpro to show off their fancy new ice creams*! I've come up with three delicious ways to eat it, most of which are 100% vegan. Alpro ice creams contain 30% less sugars than the market reference in ice cream too, so you can eat these without any guilt.. right?
After brainstorming some ideas with the guy who has the sweetest tooth in the world, I settled on three recipes and collected up all the ingredients for them. All of these are completely vegan if you use dark chocolate, rather than milk or white, but I couldn't resist how cute sprinkles look on white chocolate!
Chocolate-dipped ice cream sandwiches are hard to beat (although I think I managed it with the final recipe..) so I thought I'd better include them.
• Heat a spoon in some warm water and scoop a little ice cream onto a biscuit/cookie of your choice - I used rich teas.
• Smooth out to the edge and sandwich another biscuit on top.
• Pop in the freezer for at least 10min.
• Meanwhile, melt whichever chocolate you fancy, and get your toppings ready.
• This one is important - let the chocolate cool slightly.
• Dip or spoon the chocolate onto the sandwich, leaving part bare for holding on to!
• Place on greaseproof paper, add your toppings and freeze for at least 20mins.
Have you ever had cereal on ice cream? It's a game changer.
• Scoop out a ball of ice cream and place in a paper cupcake case and put back in the freezer.
• Meanwhile, melt the chocolate of your choice, and leave to cool for a bit.
• When it's cool enough to not melt the ice cream, but still slightly runny, pour over the ice cream ball and add a topping - chopped nuts, cereal, or sprinkles.
• Put back in the freezer for at least 20mins.
Cracking that hard chocolate shell to get to the gooey ice cream beneath is so satisfying!
And I've saved the best 'til last..
• Make rice krispie treat mixture - I used this recipe. You can use vegan marshmallows & butter.
• Make discs of the mixture on greaseproof paper, as similar size as you can. Leave to harden.
• Use a warm spoon to spread Alpro Vanilla Ice Cream onto one of the discs, and sandwich with another.
• Add lots of colourful sprinkles!
• Place on greaseproof paper and freeze for at least 20min.
• Melt dark chocolate and stir in cornflakes, coating them all.
• You can stir in chopped hazelnuts too for an extra nutty treat.
• Make discs of the mixture on greaseproof paper, as similar size as you can.
• Refrigerate until hard.
• Use a warm spoon to spread Alpro Hazelnut Chocolate Ice Cream onto one of the discs, and sandwich with another.
• Place on greaseproof paper and freeze for at least 20min.
These require a bit more effort, but oh my god are they worth it! These are big, beastly ice cream sandwiches for when you need a more decadent treat.
