coori pizza party.



Who doesn't love a pizza party...? How about a gluten free, homemade, cooked-on-the-BBQ pizza party?! Sounds pretty epic, right? Read on to see how it's done!


The lovely people at Coori sent me an example of their monthly subscription box - it contained lots of gluten free, dairy free, nut free.. you name it, they have food that is free from it! So if you have allergies to food, this could be something you need to look at! In the box there were lots of store cupboard items, and a few things like stuffed pastas & pies.

There were also mixes like this pizza one below, as well as one for bread & a puff pastry one. So we decided to have a pizza party to see how easy it would be!

All you had to add to the pizza mix was water and yeast (which luckily my chef boyfriend has in his cupboard!) and form it into a dough. I've never made pizza dough before, but Nick said it wasn't as stretchy as normal dough - most probably because of the lack of gluten! We left the dough to rise while we snacked on some of the Coori box snacks!







We decided to cook outside as it was a warm day & Nick wanted to try out his pizza stone on the BBQ. It's so nice cooking in the fresh air! We chucked a bit of semolina on the board to stop the dough sticking, and formed lots of little pizza bases. 

Lots of ingredients were chopped up, and then we started making our creations! 

We had homemade pizza sauce & harissa, pesto, 4 kinds of cheese, lots of veggies, stuffed peppers, pepperoni and chicken... 










We soon discovered that the BBQ had to be quite a lot hotter, so we half cooked them on the pizza stone to get that smokey flavour, and then finished them off in the oven.

Just look at them all! Aren't they beautiful?!

  2. These look so good! I'm on a really restrictive diet from the dieticians at the moment and the lack of gluten drives me mad. It's like it's gluten which makes things taste good! So it's really nice seeing more gluten free stuff online. Maybe I'll give some of this pizza mix a try! :)

    1. I haven't tried cauliflower pizza, but I've seen photos/blogs about it and it looks nice, and healthy too! Definitely one for the list. x

  9. The pesto one looks so dreamy! How did you find the gluten free base? I'm trying to stay away from wheat and so far have not found many decent gluten free pizzas which makes me very sad!

    1. Hey Laura, the gluten free base was nice but I think I'll add some seasoning next time as it was quite plain. It didn't stretch like a normal pizza dough, but that doesn't really matter. Was nice and crunchy when it was cooked, and I don't think I would really be able to tell the difference if I was given one GF and one normal! Worth a try I think :) plus it's really fun making your own pizzas! x

  10. That looks delicious! <33 I like the idea of something gluten free without compromising taste, fortunately I don't have an intolerance but it's supposed to be so much better for the system?

    1. Gluten in itself isn't bad for you, unless you have an intolerance or sensitive digestive system. Gluten is a protein that makes bread etc doughy and delicious! x
