world on a plate - greece.



Greece has been in the news a lot lately, but something that isn't mentioned is their scrummy food (for obvious reasons - I guess it's not everyone's top story right now) I'd never really thought of cooking Grecian food until Expedia asked me to be part of their World on a Plate challenge..


I was sent a box full of goodies from Greek Deli, including olives, wine, honey, feta cheese.. lots of wonderful things. We picked up a few extras and fresh things, and decided to cook a BBQ inspired by Grecian cuisine - yes, another BBQ


ON OUR MENU:

• SOUVLAKI - kebabs made from meat & vegetables.

- For the lamb - cut lamb steak into similar-sized pieces. Mix honey, lemon, cider vinegar, garlic, salt & pepper to taste, and marinate for as long as you can. Thread onto pre-soaked wooden skewers.

- For the chicken - cut chicken thigh fillets into similar-sized pieces. Mix with cumin, ground coriander, garlic, mustard powder, cinnamon, chilli powder, salt and pepper, and marinate for as long as you can. Thread onto pre-soaked wooden skewers.

- For the vegetables - cut aubergine, courgette, peppers, and red onion into similar-sized chunks. Place in a dish, add cherry tomatoes, and mix with lemon and oregano. Thread onto pre-soaked wooden skewers.


• BABA GHANOUSH - a dip made from roasted aubergine.

- Roast a whole aubergine until the flesh is soft. Scoop it out, mash it and mix with 1 garlic clove, lemon juice, tahini (or sesame oil if you can't get it), cumin and olive oil. We used this recipe as a guide. 


• TZATZIKI - a yoghurt dip with mint and cucumber.

- Mix yoghurt, lemon juice, grated cucumber, finely chopped mint, garlic, sugar, salt and pepper to taste.


• SALADS - roasted peppers, sun dried tomatoes & feta, and mixed leaves.

• PITTA BREADS 


A pretty straight forward menu, and everything was pretty easy to prepare. We made the dips from scratch too, which I'd never done before but would most definitely do again! 

We invited some friends over to enjoy all the food with us, and everyone went quiet as they were eating - that is a sign of amazing food! Everything tasted beautiful, especially when it was all stuffed into a pitta bread! So many delicious flavours were happening!
