coffee & whisky cupcakes with whisky glaze.


(By that, I do not mean those treats hidden beneath my t-shirt..)

It's been a while since I've baked, and even longer since I baked something new! Yesterday was my super good friend Charli's birthday, so I baked some cakes. She's a pretty big fan of both coffee and whisky, so I thought these would be pretty perfect for her! I think she liked them :)

Cupcake ingredients:
• 125g unsalted butter
• 175g caster sugar
• 200g self raising flour
• 1 tablespoon cocoa powder
• 1 egg, beaten
• 1 teaspoon vanilla extract
• 2 tablespoons Scotch whisky
• 1 tablespoon instant coffee
• 125ml warmed milk

Method:
• Preheat the oven to 200ºC & line a muffin tin with cases
• Cream the butter & sugar together until pale and fluffy
• In another bowl, sift the flour & cocoa
• Add the vanilla extract & whisky to the beaten egg
• Dissolve the coffee in the warm milk
• Gradually add the egg mixture to the butter & sugar
• Add half the flour/cocoa & half the milk/vanilla/whisky to the batter and mix
• Mix in the remaining ingredients & divide between 12 cupcake cases
• Bake for 12-15 minutes, or until a skewer comes out clean
• Leave to cool completely on a wire rack before icing

Icing ingredients:
• 110g unsalted butter
• 2 tsp vanilla extract
• seeds from 1/2 a vanilla pod
• 2 tsp whole milk
• 200g icing sugar
• 2-3 shots of Scotch whisky

Method:
• Heat butter, vanilla & milk over a low heat for 7 minutes
• Add to a bowl and sift in the sugar, a little at a time
• Mix to a paste, add the whisky & stir until smooth
• Use a non-serrated knife to ice the cupcakes & sprinkle a little cocoa powder

  18. If you want to satisfy your taste buds with high class and share some happy moments with your friends, you must buy coffee beans of your choice, rather than depending on the readymade coffee powder.
